Ingredients
  1. 2 Tablespoons Olive Oil
  2. 1 1/2 Cups Chopped Onions
  3. 1 Cup Chopped Celery
  4. 1 Cup Diced Carrots
  5. 1/2 Cup Chopped Green Onions
  6. 2 Tablespoons Minced Garlic
  7. 1/4 Cup Parsley
  8. 2 Tablespoons Basil
  9. 4 Bay Leaves
  10. 3 Quarts Stock
  11. 1/4 Pound White Rice, Uncooked
Instructions
  1. Heat the oil and add the onions, celery, carrots, green onions, garlic, parsley, basil and bay leaves. Saute for 4 minutes.
  2. Add the stock and rice, bring to a boil.
  3. Reduce the heat to a simmer, uncovered, for about 20 minutes or until the rice is tender.
