Ingredients
  1. 1/2 Cup Uncooked Quinoa
  2. 1 Tablespoon Olive Oil
  3. 1 Medium Onion, Finely Chopped
  4. 1 Medium Green Bell Pepper, Finely Diced
  5. 1 - 15 Ounce Can Red Beans, Drained, Rinsed & Coarsely Mashed
  6. 1 - 15 Ounce Can Crushed Tomatoes
  7. 1 Medium Tomato, Diced
  8. 1 Tablespoon Soy Sauce
  9. 1 Teaspoon Agave Nectar
  10. 2 Teaspoons Chili Powder
  11. 1 Teaspoon Paprika
  12. 1/2 Teaspoon Dried Oregano
Instructions
  1. Rinse the quinoa.
  2. In a saucepan add the rinsed quinoa and 1 cup water. Bring to a boil.
  3. Once boiling, cover and reduce heat to simmer. Simmer until all of the water is absorbed, which will take about 15 minutes.
  4. Heat the 1 tablespoon olive oil in a skillet.
  5. Add the onions and cook until they are translucent.
  6. Add the green bell pepper and cook until both are golden.
  7. Add the green bell pepper & onion mixture to the cooked quinoa.
  8. Next all everything else: beans, tomato sauce, diced tomato and spices.
  9. Bring to a gentle simmer.
  10. Cover over medium to low heat for 5 to 7 minutes, stirring occasionally.
