Sometimes I just crave a salad. There’s just something great about fresh veggies in a bowl, something totally simple. Just was there are some great simple salads, don’t be afraid to play with your food and make a salad that is fit to be your entreé.
A salad as your entreé? Yes it is totally possible! I’ve noticed it has become very common for restaurants to have “dinner salads”, which is exciting…unless you’re vegan. You always have to ask for something to be left off and as about special dressings, in the end it just turns out to be a big headache.
The best part of this salad is it would be a great work lunch. I would recommend placing the salad base, chickpeas and dressing in separate containers though. I do have leftover chickpeas from my salad, and I’m planning to make a salad to take to work with me tomorrow.
