Sometimes all I want to eat is simple mac-n-cheese. There’s just something so comforting about the creamy cheese and pasta. As most of the world I grew up on the stuff from the box that turned out to look like it was from another planet due to the little extras that were put into the cheese powder. As a kid I never thought anything of it and just knew in the end it would be good.
On holidays we were treated to homemade baked mac-n-cheese. That same creaminess and pasta mixture, but without that neon orange glow – covered in a crunchy crust. As I turned to the vegan lifestyle that is something I missed, I missed it a lot.
After some playing and research I think I made something that is miles above regular baked mac-n-cheese. Plus it gave me a way to use pine nuts I have.
The sauce for this is just a basic “milk” and nutritional yeast mixture. The topping is a super simple mixture of pine nuts and bread crumbs.
